狭山茶(埼玉県)
Sayamacha is known as one of the top three green teas in Japan. There is a song that goes, “Shizuoka for color, Uji for aroma, and Sayama for taste.”
The characteristics of Sayamacha are a deep flavor with sweetness and a rich taste. This comes from the unique roasting techniques. It is known as “Sayama-Hiire.” At the end of the tea-making process, the tea leaves of Sayamacha are roasted at high temperatures. This makes its taste and flavor stronger than other tea.
There is another reason which makes Sayamacha great. Saitama is a cool place for growing green tea. There are fewer harvests in a year, so tea trees can rest a lot. Even the first tea of the season grows slowly, and it makes the taste rich.
