Soup curry is a specialty of Hokkaido. Regular Japanese curry is thick, but soup curry is smooth. But it’s not diluted, either. It’s a curry-flavored soup with broth and spices. Even though both are called “curry,” they’re made very differently.
Soup curry started as “medicinal curry” in a coffee shop in Sapporo. The coffee shop owner made this special soup curry to help his father recover from illness. He researched spices and Chinese herbs all on his own.
More than 200 restaurants in Sapporo make soup curry. People also enjoy it at home a lot.
