In Japan there are six places famous for their pottery. Two of them are Seto and Tokoname.
The main difference between Seto ware and Tokoname ware is the color. Seto ware is made from white clay. Tokoname ware is made from vermilion clay. The difference in color has to do with the amount of iron in the clay. Seto clay contains very little iron. Tokoname clay contains a lot of iron.
Because a Tokoname teapot has a lot of iron in it, the tea in the teapot tastes better. The iron mellows the astringency and bitterness.
