“Nagoya-meshi” is a local food that is loved in Nagoya and all of Aichi Prefecture. There are many dishes in this category, such as miso-nikomi udon, tebasaki, and hitsumabushi. Many of them are made with miso.
Miso-nikomi udon, miso-katsu, and miso-oden use soybean miso. It is made from soybeans and salt. It is considered to be the origin of miso.
Soybean miso is highly nutritious and does not go bad easily. Therefore, it is suitable for carrying around, and was used as food for soldiers during the Sengoku Period.
“Nagoya-meshi” was loved by Tokugawa Ieyasu. Now it is a food culture that the Tokai Region is proud of.
